High Protein Soft Pretzels Charleston-based Certified Integrative Health Coach Alisa Turner believes that people should be able to eat their favorite foods while getting healthy. Turner helps clients navigate the world of nutrition and wellness information by reimagining classic comfort foods in a way that keeps progress going and makes weight management sustainable. Turner has a teenage boy who’s recently taken to lifting weights and eating well, allowing her to do more of what she loves: tweaking recipes. One of his recent favorites has been high-protein soft pretzels, which typically have about 58 grams of net carbs and only 9 grams of protein. By swapping regular flour for high protein, high fiber flour and using ingredients she already had at home, Turner wowed her teen and Instagram followers with a high protein soft pretzel recipe that tastes like the junk food version — but packs five times the protein and ten times the fiber of traditional pretzels. Easy to make ahead and freeze, this pretzel dough recipe is one for the ages. INGREDIENTS • 1 ½ cups warm water (110-115 degrees F) • 1 tablespoon Swerve sugar substitute • 2 tablespoons kosher mineral salt • 2 ¼ teaspoons instant yeast • 616 grams keto flour • 2 ounces reduced fat butter (in the pretzel dough) • 1-ounce reduced fat butter (on top before baking) • 10 cups water • 2/3 cups baking soda INSTRUCTIONS Mix 1 ½ cups of water, swerve, yeast and salt in a stand mixer with a paddle attachment on low for 10 seconds.
