BY ANGIE COLYER DUPREE There's a subtle shift happening in the food world as more chefs step away from constant hustle and choose a slower, more intentional way of cooking—one that values sourcing, seasonality and presence over speed. Jeanine Kutil of Well Space Kitchen, a holistic private chef and health coach, brings decades of kitchen experience to her wholefoods approach with a weekly meal prep service that's 100 percent organic, seed oil-free, gluten-free and seasonal. This recipe reflects that philosophy: simple, seasonal and thoughtful, celebrating Lowcountry spring with fresh tilefish from Shem Creek and produce that reconnects us to place. TILEFISH WITH SPRING SEASONAL SALAD • 2 pieces local tilefish (6 to 8 ounces each) • ½ cup dry white wine • 1 cup pea shoots or microgreens • ¼ cup fresh mint leaves • 4 radishes, sliced • ½ orange, segmented • ½ lemon • 1 cup peas (fresh or frozen) • ¼ cup extra-virgin olive oil • Splash neutral vinegar (rice vinegar recommended) • Salt and pepper to taste • Butter (optional) Recipe Jeanine Kutil wellspace.coach Tarvin Seafood misspaulashrimp.com INSTRUCTIONS: Pat tilefish dry and season with salt and pepper. Heat a pan with a small amount of olive oil and sear fish one to two minutes per side. Lower heat, add white wine and cook five to six minutes until reduced. Finish with lemon juice and a small knob of butter if desired. Meanwhile, boil peas for two to three minutes, then strain and rinse under cold water. Blend half the peas with lemon juice, mint, 2 tablespoons olive oil, salt and pepper until smooth. Toss remaining peas with pea shoots, radishes, orange segments, the juice from your lemon and orange, vinegar and olive oil.
