After health concerns that fueled her desire to feel lighter and have more energy, Manson started playing with traditional recipes to boost their nutritional value and reduce the guilt associated with eating them. Her recipe for vegetable barley soup is a wholesome way to feed the family, warm up after a chilly day and recover from a busy day. Her recipe is not only delicious and nutritious, it’s easy to make because it can be made using frozen produce when fresh options aren’t available. INGREDIENTS • 1 teaspoon kosher salt • 1/2 teaspoon coarse ground black pepper • 2 tablespoons unsalted butter • 2 tablespoons olive or avocado oil • 1 yellow onion, chopped • 4 cloves fresh garlic, minced • 3 stalks celery, chopped • 2 large carrots, cut into 1-inch chunks • 4-5 cups low sodium vegetable stock (reserve 4 tablespoons for thickening) • 1/4 cup tomato paste • 3/4 cup pearled or hulled barley • 1 bay leaf • 1 teaspoon dried thyme • 1 tablespoon Worcestershire sauce • 2 tablespoons cornstarch • 2 large Yukon gold potatoes, cut into 1-inch chunks • 1 cup frozen corn • 1 cup frozen green beans • 1 cup frozen green peas INSTRUCTIONS Heat the olive oil and butter in a Dutch oven or similar large pot over medium heat. Once hot, add the onion, celery, garlic and carrots. Cook, stirring occasionally, until softened, about 5 minutes. Stir in the barley, Worcestershire sauce, dried thyme, salt and pepper. Add the vegetable broth, tomato paste and bay leaf. Stir to combine. Bring the pot to a simmer, cover and reduce the heat to a low simmer. Simmer the soup with the lid on for 25 minutes. Make a slurry with 2 tablespoons of cornstarch and 4 tablespoons of reserved veggie stock. Stir into the pot. Start with half the slurry if you like a soupier stew and add more as desired. Stir in the potatoes. Cover the pot again and simmer the soup for 35 more minutes, until the barley is tender, adding the frozen veggies during the last 15 minutes.
